The leg section, also called ‘drumstick’, is the most meaty part of a chicken. It is rich in meat and flavor, firm from the outside but tender towards the inside. The thighs are juicy and sweet and therefore make the most expensive part of the whole chicken. In Chinese societies, the drumstick is reserved for the most meritorious person to enjoy. Drumstick is considered a reward and used when emotional interactions between members of a community are more restrained and implicit in expression. To hand someone the drumstick over is believed to relax tension between giver and receiver and create warmth and camaraderie between the two parties.
To honor the 18th birthday of my little brother I did this piece for him as a gift and to employ the rite of the passage.

雞,作為家家戶戶過年過節必備主菜之一。雞腿,是整隻雞最多肉的部位,其肉多而瘦,富有雞鮮味,肉質頗堅實。雞腿性溫、味甘;可益氣血、補精,添骨髓。雞腿是整只雞中價錢最昂貴的部位,被視為家中有權威或立功者方能享用的美食。 作為世世代代相傳的非物質文化傳統之一,一般家庭裡大日子殺雞還神才有雞腿吃。在華裔文化裡情感互動在表達上往往比較內斂含蓄,飯桌上夾雞腿這個舉動輕易成了表達情感的最佳媒介。
因身在外國唸書而無法與家人同桌歡慶胞弟的成年禮,唯有為他製作一個大雞腿。
